Best Muffins for Muffin Lovers

It’s that time of year for the Muffin Top and the Best Muffins for you Muffin Lovers. We’ll get to all  the recipes below, but first a little about Muffin Tops.

Muffin-top originated as Australian slang in mid-2003, but has since become popular in other English-speaking countries. It may have been first popularized by the Australian television show Kath & Kim. Australia’s Macquarie Dictionary named “muffin-top” the word of the year in 2006; the American Dialect Society named it one of the “most creative” new terms that same year. The Oxford English Dictionary added the term to its revised online edition in March 2011.

According to William Safire, writing in The New York Times Magazine, “Muffin-top fills a lexical void” and “describes the roll of excess flesh spilling out primarily in front but possibly all around.”

In November 2007, the BBC website published an article entitled “Is this the end of the muffin top?” which described a fashion trend for high-waisted shorts, trousers and miniskirts, which they believed would prevent the appearance of muffin tops. Laura Craik, however, fashion editor for London’s Evening Standard, said that she did not think it spelled the end of the muffin top, but that “perhaps they will be in retreat for a while.”

We know the result of eating too many muffins, but life is short, and muffins are too delicious to pass up.  Just go for a few extra runs or something.

Best Muffin Recipe Ingredients:

2 cups all purpose flour
1 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2/3 cup brown sugar
2 eggs (beaten)
2/3 cup milk
1/4 cup butter (melted)
1 cup peeled and grated/shredded apple
1/4 cup chopped walnuts (optional)

Best Muffin Recipe Directions:

For this recipe, in a large bowl sift together the flour, baking powder, salt, cinnamon and nutmeg.  Mix in brown sugar.  In a separate bowl, combine eggs, milk and butter.  Mix well.  Add egg mixture to flour mixture and mix (do not over mix).  Fold in apples and walnuts (if using).  Spoon batter into lightly greased muffin tin.  Bake in preheated oven at 350F for approximately 20 minutes or until golden and baked through.  Let cool in pan for 5 minutes before removing to wire rack to cool completely.

Best Muffin Recipe Ingredients:

2 cups flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
2/3 cup brown sugar
1 teaspoon vanilla extract
1 cup pumpkin puree
2 eggs (beaten)
1/2 cup chopped pecans

Best Muffin Recipe Directions:

For this recipe, in a large bowl, combine flour, baking soda, baking powder, brown sugar, cinnamon and salt.  Mix well.  In a separate bowl, combine pumpkin puree, eggs and vanilla.  Add pumpkin mixture to flour mixture until just combined.  Do not over mix.  Fold in chopped pecans. Spoon batter into lightly greased or lined muffin tin and fill to 2/3 full.  Bake in preheated oven at 350F for approximately 20 minutes or until golden and baked through.  Cool in muffin tins for 5 minutes until removing to wire racks to cool completely.

Best Muffin Recipe Ingredients:


¾ cup flour
2 tablespoons brown sugar
1 ½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ cup uncooked oatmeal (traditional slow cooking oats)
1 teaspoon cinnamon
¼ cup butter or margarine
¾ cup buttermilk
1 egg


Best Muffin Recipe Instructions:


For this recipe, preheat oven to 400F. Grease a 12-hole muffin tin well and set aside. Combine the flour, baking powder, baking soda, salt, sugar, cinnamon and oatmeal in a large bowl. Mix together well. In a separate bowl mix together the butter, buttermilk and egg. Mix well. Gently fold into the dry ingredients. Take care not to over mix. Pour batter into 12 muffin cup tin and bake for approximately 15 to 20 minutes or until baked through. Best served warm with a little butter and jam.

Best Muffin Recipe Ingredients:

2 cups all-purpose flour
½ cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 egg (lightly beaten)
1/3 cup vegetable oil
1 cup unsweetened applesauce
1 cup fresh or frozen cranberries, chopped into smaller pieces
½ cup pecans chopped


Best Muffin Recipe Directions:


For this recipe: Preheat oven to 350F. Lightly grease the muffin tin. In a large bowl mix together the flour, sugar, baking soda, salt and cinnamon. In a separate bowl mix the eggs, applesauce and oil. Add the applesauce mixture to the dry ingredients and mix together gently (do not over mix).
Gently fold in cranberries and scoop mixture into muffin cups until 2/3 full. Bake at 350F for approximately 30 minutes. Cool for 5 minutes before removing from pan.

Best Muffin Recipe Ingredients:


3 cups coarsely crumbled low-fat bran muffins (about 3 medium muffins)
4 cups assorted fresh fruit chunks
2 cups nonfat or low-fat vanilla or fruit-flavored yogurt


Best Muffin Recipe Instructions:


For this recipe: Place half the muffin crumbs in a 2 1/2-quart glass bowl or airtight container. Arrange fruit in 3 1/2 cup amounts in on top. Cover with remaining muffin crumbs. Spoon yogurt evenly over the top. Top with remaining fruit, cover and refrigerate for at least 6 hours.

Best Muffin Recipe Ingredients:


1/2 cup rye flour
1/2 cup whole wheat flour
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup 2% milk
1 large egg
6 tablespoons Canola oil


Best Muffin Recipe Instructions:


For this recipe: Insert the muffin liners into the cups on the muffin pan. Preheat the oven to 400 F. In a container add the dry ingredients then combine the wet ingredients and stir until well blended and smooth. Scoop mixture into the muffin cups until they are 2/3 full. Place in the oven and bake for approximately 16 minutes, or until toothpick comes back clean from testing it in the center of the muffin. Cool on a wire rack and enjoy.

1 box corn muffin mixture
3 eggs
1 C milk
1/4 C butter, melted
1/2 tsp salt
1/2 tsp pepper
1 (15.25 ounce) can whole kernel corn, drained
1 (14.75 ounce) can cream-style corn

For this recipe: Preheat oven to 350 degrees. Pour muffin mixture into a large mixing container. Add eggs and milk. Blend until muffin mix is just moistened. Add butter, salt and pepper and mix well. Fold in both cans of corn. Grease a 2-quart casserole dish. Pour corn mixture into casserole. Bake uncovered for 45 minutes or until knife comes out clean when inserted in the center of casserole.

    I was thinking as I was reading that I couldn’t even pick a fave, they all sound good. Then I got to the cranberries, mm hmm, mmm. All hail the muffins (but not the muffin tops. 🙂

      Isn’t the muffin top history funny. We had low cut jeans in the 70’s, didn’t we? I guess we were skinnier then, and didn’t have muffin tops to coin it then.
